
Hello, I’m very excited to share with you a delicious quick salad I made in minutes. First, I scanned the refrigerator with sleepy eyes, grabbed an unopened plastic box of organic salad (no, we don’t eat everything organic), a beefsteak tomato and pecorino cheese. All very respectable ingredients for a nice salad.
The kids were in a trance watching their morning cartoons, perfect time to sneak away to my crafting area and put a salad together. Wait! Make a salad in my crafting area? Yes, let me back up.
I’m participating in a Pinterest Summer potluck, so this is my summer dish!
Now, going back to the salad, the best ingredient? Pluots. Fresh from the farmer’s market. I gathered my main ingredients together plus colavita olive oil, modena balsamic vinegar, pecorino cheese, coarse salt and pepper.
First, I layered a plate with the mix of salad, chopped one beefsteak tomato and two pluots. Then splashed one tablespoon of olive oil, a few drops of balsamic vinegar, salt pepper and one teaspoon of pecorino cheese for garnish and extra flavour.
Voila, my Pluots & Tomato Quick Salad came to life! I’ve listed the ingredients below with measurements. The best part about this salad? You can leave it in the fridge for the day and eat it hours later, the greens are soggy-less, and all the flavours are there.
Right after I finished photographing the salad my middle child was tackled by his older brother while little sister was defending middle brother… Chaos ensued. The salad had to go in the fridge, and this momma made sure all of her kids remained in one piece while the wrestling didn’t end up in tears.

You have to savour my Pluots & Tomato Quick Salad! Like all my projects and crafts, it is very easy to make, simple and yum.

Pluots & Tomato Quick Salad Ingredients
- Organic fresh salad mix
- One beefsteak tomato
- Two pluots
- 1 TBS of colavita extra virgin olive oil
- 1 splash of modena balsamic vinegar
- Salt & pepper to taste.
- 1 TSP of pecorino cheese
Place a bed of salad on a plate, cut in quarters one tomato and two pluots. Arrange them pretty on the bed of salad. Add extra virgin olive oil, a splash of balsamic vinegar. Then sprinkle salt and pepper to taste. Finally add pecorino cheese in the center of the salad. Enjoy!
One tip: make sure to use Colavita extra virgin oil. My favorite local Italian restaurant mentioned this was their key ingredient in all their salads. It is delicious!
